
RIVERHOUSE HOTEL SHARES A CHERRY TOMATO SAUCE RECIPE
At the Camden Riverhouse Hotel, the gardens have a plethora of cherry tomato plants. There are tomatoes planted in the hanging baskets on the footbridge, window boxes on the hotel and in the big planters in the parking lot. They are everywhere! We enjoy sharing the tomatoes at the front desk. Guests are welcome to snack on the sweet vegetables that the crew picked that day.
Since the crew seemed to be master gardeners of growing tomatoes, I wanted to find out if they also knew how to cook the tomatoes. Lucky for us, one member of the Camden Riverhouse team was nice enough to share their family cherry tomato sauce recipe. Thank you TJ for sharing “Nanna’s Italian Napolitano Sauce”.
1 Gallon Cherry Tomatoes
2 cups Water
3 gloves crushed garlic
3-4 tablespoons of virgin olive oil
1/2 cup fresh chopped basil
1/2 cup fresh chopped parsley
1 tsp crushed red pepper
1tsp sugar
salt and pepper to taste
red wine *optional
METHOD:
- Process the tomatoes – boil water and cherry tomatoes, simmer for 1.5 hours.
- In another pot add olive oil, crushed garlic, salt and pepper, and red pepper – saute until garlic is slightly brown.
- Add crushed tomatoes
- Add basil and parsley
- Add Sugar
- add red wine
Cook one hour on low flame, stir often.
